This is where the Arapyaú Institute steps in. For years, Arapyaú has connected demand and supply across forest-based food chains, collaborating with companies, producers, local organizations, and technical partners to reduce operational risks and enhance production capacity. By fostering consistent and scalable demand, it strengthens supply chains, improves processing, and ensures reliable delivery for the food industry.

Grupo Trigo, a holding and master franchisee of recognized restaurant brands with over 850 stores, partnered with Arapyaú to develop an economic model that transforms consistent demand into a catalyst for authentic Brazilian ingredient supply chains and local entrepreneurship.  

Since 2024, the group has been testing ingredients such as puxuri — an Amazonian seed with a nutmeg-like flavor — in white sauce recipes across its brands. Tucupi and other authentic Brazilian ingredients have been added to this pipeline, expanding sourcing to include native fish supply chains. 

Supported by the Arapyaú Institute, what began as a culinary experiment is evolving into a new business model where demand creation and supply chain development reinforce one another. This demonstrates how forest ingredients can transition from experimentation to scale.
